Football Food!

I can't think of a better time of year to get in the kitchen and cook some food!  Barefoot Books' Kids' Kitchen cards are on sale until the end of January and they offer some fun, healthy and creative recipes for you and your child to share.  The forty recipes in this colorful deck are based around the five main food groups, and offer a healthy and exciting way to learn about cooking.



Mean Green Guacamole
Feeds 6 (as a dip)  Making Time 10 minutes

What to find:
1 large ripe avocado
1 medium tomato
1 scallion
Half a lime
2 handfuls of parsley (optional)
Veggies to cut up in bite sized dipping sticks (e.g. carrots, peppers, cauliflower, cucumber, broccoli, celery)
Cutting board
Vegetable knife
Spoon
Large bowl
Scissors
Juicer (optional)
Measuring cup
Serving Bowl

1. Put the avocado onto a cutting board and cut it lengthwise from the stem.  Crisp the avocado with both hands and twist each hand in a different direction to separate the halves.  Use a spoon to remove the pit.  Scoop out the flesh with the spoon and put it in the large bowl.
2. Dice the tomato into small chunks.  Add the chunks into the bowl with the avocado.
3. Use kitchen scissors to trim the scallion and snip it into small pieces.  Add the snipped scallion to the bowl.
4. Put the lime on the cutting board and cut it in half.  Twist one half of the lime around a juicer (or just squeeze) to get the juice out.  Add this to the bowl.
5.  add the parsley (without stemps), if you're using it, and then use a fork to mash all the ingredients together until you've created a thick, mean green dip!
6.  Spoon the mixture into a serving bowl and get dipping!

*Always have a grown up with you when you cook!  Be sure to scrape all of the flesh out of the avocado, as it is packed with fourteen minerals that stimulate growth, including iron and copper for your blood.

  2. Love love love guac! Of course, this would be about enough for me to eat myself :-) And I definitely feel the need to add some heat to mine as well...hmmm...I think guacamole is definitely on the menu for this weekend! If I can find ripe avocados that is...
