Fun Fridays

We started a new tradition around these parts - Friday Game Night.  Easy, cheap and fun.  We keep in pretty simple, the kids get to pick the game but it has to be a different one each week.  We make homemade pizza with all organic ingredients to keep it healthy and fresh.  Last week we made tomato, red pepper, basil and mozzarella flatbread and it was so good the girls asked for a repeat next week.  To my delight, we played Sorry! which took me back to playing it back in the day when my jelly bracelets were flipping those cards.
Easy Pizza Dough Recipe - in the bread machine!
  • 1 cup water
  • 3 tsp. olive oil, divided
  • 2 cups bread flour
  • 1 cup whole wheat flour
  • 3/4 tsp. salt
  • 2 tsp. Parmesan cheese, grated
  • 1 tsp. active dry yeast
  • cornmeal
Place water, 2 tsp. olive oil, flours, salt, cheese and yeast in bread machine according to manufacturer's directions. Select dough cycle. When cycle is complete, place an empty rimless cookie sheet in oven and preheat to 475 degrees F.
Turn dough out on a separate rimless cookie sheet or silicone cutting mat, dusted with cornmeal. Knead dough a few times. Divide in half. Wrap one half in plastic wrap and refrigerate or freeze for later.
Roll other half of dough into a 14-inch circle (or square -- the shape doesn't really matter). Brush with remaining teaspoon of olive oil. Slide dough onto cookie sheet in oven and bake 8 minutes. Remove from oven and continue with your toppings.  We used tomatoes, red peppers and mozzerella...oh and basil, a favorite around here!

  1. Oh, I LOVE the game "Sorry!" Like, *competitively* love it with my sister. We get so intense at the holidays that no one will play with us anymore. :)

  2. The pizza looks great! Very kid friendly! Can't wait to make it.

  3. I remember that game! We have been playing Zingo around here. The girls love it and actually very easy for them to both play (ages 4.5 & 2) at some level. I gave my bread machine away a few years back- bummer.

  4. augh!! I remember the jelly bracelets!! They were my favorite.

Thanks for the recipe, we are huge homemade pizza fans at our house!!
