Dessert on the fly when your cupboards are dry!

We're all about utilizing what we have in our refrigerator these days so when the girls wanted a dessert last week, I had to come up with something on the fly.  The result?  Quick and easy baked apples with oatmeal.  Not something I'd serve often but, it satisfied the girls and saved me a headache.  

Quick & Easy Baked Apples:
  • Wash and core an apple of your liking
  • Mix a packet of instant oatmeal (I used Kashi Maple but anything will work) with water, as directed
  • Spray a sheet of tin foil with non stick spray and place the apple in the middle
  • Spoon the instant oatmeal into the center of the apple, letting it drip over and around your apple
  • Wrap the apple - no need to get fancy, and bake for about 35 minutes at 350 degrees
  • Top with vanilla ice cream, vanilla yogurt or whipped cream if desired
This is a great dessert for chilly Fall nights too!
