Breakfast for dinner!
A couple of days ago, my friend Holly over at Into Ablivia, blogged about a Breakfast Idea that looked a little silly. In fact, I stated that her Puffed Oven Pancake resembled a giant mushroom that I saw growing in my backyard last Summer. Having said that, I was still intrigued. After reading the ingredients, I just couldn't resist giving it a try. It was, hands down, one of the easiest "breakfast for dinners" I've put together. The house smelled delicious and although I was a little worried that this puff might explode in my oven, I was thrilled to see that it grew only to this size:
The kiddos were excited and facinated by this strange main course, until I served it up with maple syrup, fruit salad and a side of blueberry sausage.
- 2 T butter
- 3 eggs
- 1/2 C milk
- 1/2 C flour
- 1/4 t. salt

PUFFED OVEN PANCAKES (aka German Pancakes)
From Better Homes & Gardens New Cook Book- 2 T butter
- 3 eggs
- 1/2 C milk
- 1/2 C flour
- 1/4 t. salt
- Preheat oven to 400 degrees. Put butter in baking dish (I just use an 8-inch casserole, I think the recipe calls for a round oven skillet or something)…heat in oven 3-5 minutes, til butter melted.
- Beat eggs. Add milk, flour and salt. Beat til smooth. Pour immediately into baking dish. Bake 25 minutes, or until puffy edges and looks done in center. Serve with fruit, syrup, powdered sugar, whatever you like!

ReplyDeleteOh my gosh, this is what my dad made for us for breakfast growing up. He called them Norwegian pancakes. They were my fav! We spooned chunky cinnamon applesauce on top of them. I can't wait to make these! thx for sharing.

ReplyDeleteYou need the apple topping - 2 peeled, sliced apples, but you could dice, 2 TBS butter, 2-3 TBS sugar if needed, 1 tsp cinnamon, in a saucepan, medium low until desired tenderness (cooking time really varies by apple variety...)

my late sister-in-law served this--my absolute favorite by the way, pancake AND sis)-- with fresh lemon juice (lemon off her tree), and confectioners sugar... Absolutely totally delicious!
