Frozen Chocolate Covered Bananas

Last week we were lucky enough to have a 65 degree day here in New England.  It got us outside, I brought the flip flops out and the girls were eager to have some ice pops.  At the store, I came across these scrumptious looking treats, frozen chocolate covered bananas and realized that Mama also would like a treat.  A couple days later, I saw on a morning show segment that not only were these treats a good snack option but at around 130 calories, a great way to have a healthy indulgence!   You can buy them from Diana's Bananas and grab the dark chocolate!

Or, make your own!  I decided to give them a whirl!

Ingredients -
1 1/2 c. nuts (optional, I did a couple of each)

3 tbsp. butter
4 firm bananas
1/2 c. semisweet chocolate morsels
8 wooden skewers

Measure nuts into shallow pan and set aside. Melt butter and chocolate morsels together in small saucepan on low heat, stirring constantly until smooth. Pour chocolate mixture into second shallow pan and set aside. Peel bananas and cut in half cross-side. Immediately dip bananas in melted chocolate to coat evenly. Roll in nuts, pressing nuts into chocolate to coat evenly. Place on wax paper lined tray. Freeze firm for 2 hours. Rice Krispies may be substituted instead of nuts.

These were a huge hit!

Have a wonderful weekend!
