Who wants BANANA ice cream?

Being HUGE fruit eaters in this house, I was pretty thrilled to come across this recipe for Banana Ice Cream!  Skeptical at first, my harshest critics do know the difference between their favorite between ice cream and fruit so I wasn't sure how this recipe would fly.  No hidden ingredients, just the real deal...and it was truly a hit. 


Banana Ice Cream
4 large very ripe bananas, peeled and frozen.  I also slice mine into chunks and freeze them in a ziploc bag



Preparation:
Place the banana slices in the bowl of a food processor. (If your banana slices have been in the freezer for longer than a day, it’s best to let them thaw slightly in the food processor bowl for 20 minutes so they are easier to puree.)

Puree the bananas until they are completely smooth and no frozen chunks remain. Scoop the ice cream into a bowl and freeze for another 1 to 2 hours before serving.  (recipe has been modified from Joy Bauer)

Variations:
PB-banana ice cream
After the bananas have been pureed, add 2 tablespoons natural peanut butter to the food processor bowl. Puree for a few seconds longer to mix in the peanut butter. Scoop the ice cream into a bowl and freeze for another 1 to 2 hours before serving.

Banana chocolate chip ice cream
After the bananas have been pureed, add 2 tablespoons mini semisweet chocolate chips to the food processor bowl and mix them in with a large spoon. Scoop the ice cream into a bowl and freeze for another 1 to 2 hours before serving.

Other ideas including topping with hot fudge, fresh stawberries, whipped cream, nuts, the ideas go on & on!Suprisingly, this is velvety smooth and yes, very banana-y.  So, if you and your kids dig 'em, you'll enjoy a bowl of this as well.  What a great way to use those too ripe bananas this Summer!  Enjoy!

  3. I love your ice cream. I also make a similar ice cream with equal amounts of frozen bananas and frozen mangoes. I love how it's so creamy without the cream.
