Banana Blueberry Bread for your Boo Boos

So, my boo boos LOVE moist, rich breads and muffins stuffed with fruit.  Anybody who reads my blog knows I'm always trying out new recipes and experimenting.  A couple of weeks ago I experimented with blueberry muffins.  This week, I tried out Banana Blueberry Bread with Strawberry Greek Yogurt.  It was good - but it didn't last more than a day in this house so, beware!



Ingredients:  (makes one loaf)
  • 1.5 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp kosher salt
  • 1/2 cup brown sugar
  • 1/4 cup organic cane sugar
  • 2 large ripe bananas
  • 1 tsp vanilla
  • 2 eggs
  • 1/2 cup Greek yogurt (I used strawberry)
  • 1 cup fresh blueberries
Instructions:  Preheat oven to 350 degrees F.  Start by combining flour, baking powder, and salt in a large mixing bowl.
In a separate bowl, mash bananas with a fork until they are gooey 
Add eggs, sugars, and vanilla…and then your Greek Yogurt
Whisk everything together until it's smooth
Pour the wet ingredients into the dry ingredients, and mix until just combined.  At this point, fold in the fresh blueberries!
Pour batter into a greased loaf pan and distribute evenly.
Pop into the oven and bake for one hour, or until the top is golden brown and a toothpick comes out clean.  Transfer to a cooling rack and (try to) let the bread cool for at least ten minutes before slicing.

Enjoy - it's really good!

  3. That looks delicious! Can you taste the Greek yogurt? We tried it once and didn't like it too much.
