Super Easy Crockpot Lasagna

The thought of a wholesome, better for you lasagna that my kids will love makes me giddy.  I've heard complaints about recipes saying that people avoid pasta in their slow cooker for fear that it will be mushy.  I've found that this isn't always the case, as long as you are careful not to overcook it, it can be quite tasty.  Here's how we made ours...brought to you buy Princess Sydney....this recipe is healthy, easy and delicious! 


Crock Pot Veggie Lasagna (Serves 6-8)
1 & 1/2 Cups Veggies (we used Zucchini, Squash, Mushrooms and Spinach but you could also useBroccoli, Cauliflower, etc)1 15 oz Container Ricotta Cheese or Cottage Cheese 
1/2 Cup grated Parmesan Cheese, fresh if you can
A handful of fresh Italian Herbs (I used basil and oregano) or dried, 1 Tbsp Dried 
1 Tsp Fresh Garlic
1/2 Tsp Pepper 
1 Tsp Kosher Salt
1 Large Egg
1 25 oz Jar Pasta Sauce or your own homemade
1 Box Lasagna Noodles (uncooked)
1 & 1/2  Cups Mozzarella Cheese, grated

1.  Pour half your sauce in the bottom of your crock-pot
2.  Chop up your veggies, mix them together and set aside 
3. Place a layer of noodles on the bottom of your crock-pot, covering the surface 
It will look something like this, you might have to break them to fit them on the bottom...
4. Combine your ricotta or cottage cheese, Parmesan cheese, salt, herbs, garlic and egg in a bowl 
5.  Season to your liking
6.  Layer half of the ricotta/cottage cheese mixture on top of the noodles, followed by 1 cup of the chopped vegetables and then one cup of mozzarella cheese.
7.  Repeat with another layer of noodles, followed by the remaining ricotta/cottage cheese mixture and the chopped vegetables.
8.  Pour the remaining pasta sauce on top of the lasagna and top with the remaining cup of the grated cheese.
9. Cook on low for 4 hours - try hard not to overcook this or it gets mushy.
10. Serve 

You'll notice there are no pictures of the final product....it's that good.  It was gone so fast that I didn't get to snap a picture of the final product!
