Little Itty Bitty Apple Pies

PIE POPS!

About a month ago, I introduced you to one of the healthiest and yummiest recipe blogs I've found in a while, Bakeaholic Mama.  She presented this delicious apple pie recipe and I had to try them out.  They were the perfect size, sweet and so yummy.  The best part was that I didn't feel too guilty enjoying one (or maybe two)...think of them as a cake pop, pie style.  SO GOOD. 

Pie Pops

Ingredients:

Double pie crust (Recipe found here) you can use store bought if you want to make this really easy!
Chunky apple sauce (recipe found here)
popsicle sticks
Directions:
  • Preheat oven to 400.
  • Roll out your pie crust to about and cut circles out with a 1.5-2 in circle cookie cutter or use a glass
  • of some sort. I used a large shot glass I had in the cupboard.
  • Lay circles on a parchment paper lined cookie sheet.
  • Place popsicle sticks in the center. Give a slight press on the stick to keep it in place.
  • Top the stick with about 1 tsp of your apple sauce.
  • Then top with a 2nd circle and crimp edges with a fork sealing the 2 crusts together.
  • Bake for about 15 minutes or until crust is golden....I went a little too long but next time they will look prettier!
