Shredded Buffalo Chicken Sandwiches for my hubby

I've come to the realization that I am not a fan of buffalo chicken or buffalo flavoring.  I love spicy and could literally throw crushed red peppers on scrambled eggs, tuna sandwiches and the spicer the better when it comes to salsa.  But, I just don't like buffalo chicken.  How's that for convincing you how great this upcoming recipe is?  Well, I had great intentions, my husband has been craving some buffalo chicken sandwiches for a while and I decided that I would make them especially for him.  He loved them!

I started with Frank's Red Hot, because he loves it.  That was the "key" ingredient. 
1 red diced red onion
2 stalks of chopped celery
1 tsp garlic
1/2 cup of Red Hot
1/4 cup apple cider vinegar
Start by sauteeing your onion until well cooked, add your chopped celery, garlic and continue to cook for about 2 minutes.  Add the Red Hot and cook all together for about 2 more minutes.  At this point, I transferred my cooked chicken to the crockpot (we had 4 cooked boneless chicken breasts ready) and poured the entire sauce over the chicken.  Or, you can pour it on raw chicken and cook for about 6 hours.  I only needed to cook it for about 30 minutes.  At the end, I was able to shred the chicken easily with a fork and knife.  We topped them with 1 tablespoon of blue cheese dressing (ranch if you prefer) and chilled iceburg lettuce.  It was a yummy hit and an easy, protein filled meal!
Oh and did I mention that this meal had an entire red onion?  But my hubby "hates" red onions...but didn't complain one bit as he soaked up the rest of the meat with his bun.  That means success in my book!
 Gets me teary just thinking about it!

  1. We love Frank's red hot here...and put it on just about everything :-) Love how healthy your buffalo chicken is. I don't fry mine, but I definitely have half a stick of butter in the recipe ;-)
