Breeze Milk Feature, Giveaway and a Recipe!

I’m always on the hunt for something new that tastes good and my entire family will enjoy. I decided long ago that I'm not a short order cook so I try to find products and recipes that we can all have.  One of my friends buys three different types of milk for her family on a weekly basis (coconut for herself, regular for her old school hubby and 1% for her kids) which has always seemed silly to me and certainly not cost effective!  Recently, we were able to try out Blue Diamond's Breeze Milk and we all enjoyed it. Blue Diamond Breeze Milk is available chilled or in a Tetra Pak. The Tetra Pak cartons do not need to be refrigerated until ready to be used. Product quality and nutrients are preserved thanks to ultra pasteurization (a heat treatment that ensures food is free from harmful bacteria) in combination with the packaging’s special barrier layers that lock out light, moisture and air and lock in all the goodness of the product.  Once recycled, Tetra Pak cartons become things like tissue products, building materials, railway ties, and even flower pots. We tried a couple different types of Blue Diamond Breeze Milk and we liked the Unsweetened Original in Almond Coconut most.  It's a blend of both Almond and Coconut Milk and is creamy with a touch of coconut.  It has no added sugar, is soy and dairy free and has 40 calories a serving.  I love that it's great in cereal, baking and cooking.  We couldn't taste any difference!  My coffee did taste a little different but it was creamy and much better than the alternatives I've tried in the past.  The girls loved it in their smoothies too!

Coconut Chicken Soup (courtesy of Blue Diamond)
2 cups Blue Diamond Almond Coconut Breeze
2 cups chicken stock or reduced-sodium broth
1 lb. boneless, skinless chicken breasts, cut into bite-size pieces
1 (3.2-oz.) package shitake mushrooms, thinly sliced (1 3/4 cups)*
2 teaspoons each:
- grated fresh ginger,
- Thai red curry paste and finely chopped lemongrass
(lemongrass paste and ginger paste found in most
supermarket produce departments may be substituted)
1 teaspoon chili garlic sauce
2 cups coarsely chopped fresh spinach leaves
1/3 cup sliced green onions
1 teaspoon finely grated lime zest
Directions
Stir together Coconut Breeze, stock, chicken, mushrooms, ginger, curry paste, lemongrass and chili garlic sauce in a large saucepan; cook until mixture starts to simmer. Reduce heat and simmer over very low heat, covered, for 15 minutes. Stir in spinach, green onions and lime zest, then season to taste. Serve as is or add one of the optional ingredients for a heartier soup. Makes 4 servings.
