Strawberry Pineapple Yogurt Bread


  • 1/2 cup olive oil 
  • 3/4 cup natural sugar (or plain sugar) plus 1 tablespoon
  • 2 eggs
  • 1/2 cup Greek Pineapple yogurt (I used, you guessed it - Chobani!)
  • 1 3/4 cup all-purpose flour
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup fresh strawberries, chopped  

  • Combine oil, vanilla and sugar, beat in eggs, one at a time.  In a separate bowl, combine flour, baking powder, soda, salt.  Then combine dry ingredients with the wet and fold in strawberries carefully.  Pour into a prepared loaf pan and pour in.  Dust with sugar.


    Bake at 350 degrees F for 55 minutes or until toothpick comes clean.  Let cool and enjoy!
