Deliciously Fresh Corn Salsa!

Anyone who knows me or reads my blog, knows that my very favorite snack would have to be chips and salsa.  Fresh salsa.  I love different varieties and enjoying the fresh, delicious taste of Summer.  I have my regular "go to" recipe but I also make this quite a bit....and the girls have developed a fondess as well!
Summer Corn Salsa
1 cup fresh corn kernels from two ears of corn (you could also use frozen but really, why?)
1/2 pint of yellow tomatoes (I used lemon boys)
1/2 cup chopped poblano pepper, seeded
3 teaspoons extra virgin olive oil
2 tablespoons fresh cilantro
3 tablespoons chopped red onion (I like mine chunky)
2 tablespoons fresh lime juice
1 chopped jalapeno pepper, seeded
kosher salt to taste

Boil corn and remove from cob, let cool.  Mix corn, peppers, onions then mix in olive oil, lime juice and salt.  Lastly mix cilantro. 

Now, enjoy this delicious and fresh alternative!

We will be enjoying a batch of this over the weekend and savoring the last full weekend of August!

  1. This looks really good! I never think to put fresh corn in my salsa, but obviously it is in season right now. I also have never used poblanos in it, I typically would use sweet bell peppers, but poblanos must give it a bit more heat? Yum!
