Un-Skinny Chocolate Cookies

So, I subscribe to all sorts of newsletters and have a lot of "skinny" recipes coming my way.  I often try to make my recipes healthier through substitutions and swaps but this time....this time, I decided I wouldn't!  Why?
  • Because it's that time of year...back to school.  When so many mothers are rocking down in their jammies and others (like me) are sobbing in the corner when the reality of time slipping on by.  I deserve a treat to swallow away my sorrows.
  • I figure these have still got to be more healthy than the preservative laden usual suspects I might find in the grocery store.  Not that we buy those but I'm just sayin'
  • Everybody (even me!) deserves a delicious treat every once and a while
  • There is nothing like these warm out of the oven
  • I wanted an excuse to fill the house with that oh, so yummy...fresh baked cookie smell? Yes, I'm stretching it here but you get what I'm saying!
Choco Choco Cookies
  • 2 1/4 cups all-purpose flour
  • 2/3 cup baking cocoa
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup (2 sticks) butter or margarine, softened
  • 3/4 cup granulated sugar
  • 2/3 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups (12-oz. pkg.) white chocolate chips
  1. Preheat your oven to 350° F.
  2. Mix flour, cocoa, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels. Drop by well-rounded teaspoon onto ungreased baking sheets.
  3. Bake for 9 to 11 minutes or until centers are set. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
These are just full of chocolatey goodness that you might not need to eat more than one to feel satisfied!  Ha! ha! ha!

  1. Sometimes... we just need butter. Probably not as much as I consume these days. Someone like you who makes better choices than I... deserves a cookie when school starts!

    Owen's first day was Wed. It's been tough. I have a minor anxiety attack every morning when I drop off.
