Weelicious Cookbook Review

Anyone who has been reading my blog for a while, knows that I often find my kid friendly recipes over at Weelicious.  Weelicious was started by Catherine McCord, a Mom who has the theory that if we teach our children from an early age to love good, healthy food, they will love it.  I found myself checking her website weekly for inspiration, school lunches, snack and meal recipes.  I was pretty thrilled this past Spring when I learned she was coming out with her very first cookbook.  Weelicious: One Family. One Meal will now get a special spot in my kitchen.  The moment I got it, I knew it was a keeper.  Beautifully photographed and designed, it captured my attention immediately and led me to realize that I wanted to make most of the recipes in this cookbook. 

The recipes included are simple, full of fresh ingredients and appeal to the littler set as well as the bigger.  The recipes were all created with nutrition in mind and the thought that we shouldn't be feeding children and adults different dishes.  We should be able to enjoy one meal together as a family.  

The first section of this cookbook talks all about Catherine McCord's philosophies regarding teaching and nurturing good eaters.  No tricking our little ones, just letting them know what they are eating and that their meals and snacks have healthy items in them.  I found this first section of the book to be informative as well as inspiring.  I love the stance she takes regarding "sneaking" healthy foods into our cooking.

The book is divided into six sections: Breakfast, Snacks, Dinner, Sides, Desserts and "Extras" including drinks, baby purees, sauces, dips and salsas!  Some of the "must trys" for our family include the Pumpkin Waffles, Sunflower Seed Brittle, Spinach Ricotta Bites, Carrot Pineapple Cupcakes and Chicken Satay.
This past weekend,  we enjoyed the Apple Vanilla Pancakes this past weekend.  Perfect for a chilly morning!
