Cranberry Oat Bread Bliss
I love bread - anyone who has been reading my blog for a while knows that for a fact. I commented on someone's blog the other day and said, "I think that if I could eat bread and butter for every meal, I would be a happy girl. Fat, but happy." (Check out Bakeaholic Mama's amazingly beautiful bread here.) With our slushy weather and a 2 hour school delay, what better time to enjoy a lazy weekday breakfast with some warm bread. This one is a little heavier with the added oats which "sticks" with you throughout the day.
Cranberry Oat Bread
Cranberry Oat Bread
- 1 cup water (70 degrees to 80 degrees)
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1 cup quick cooking oats
- 2 1/2 cups all-purpose flour (we use King Arthur)
- 3/4 cup honey
- 1/3 cup oil
- 2 eggs
- 1/2 cup milk
- 2 cups fresh or frozen cranberries
- Preheat oven to 350 degrees F (175 degrees C). Grease two 8x4 inch loaf pans.
- In a medium bowl, stir together flour, baking powder, baking soda, salt, cinnamon, and oats.
- In a large bowl, mix together honey, vegetable oil, eggs, and milk. Mix in flour mixture until just moistened. Stir in cranberries. Divide batter into prepared pans equally.
- Cook for 40 to 45 minutes, or until a tester inserted in the center of the loaves comes out clean.
Yum! This looks delicious! I have been thinking about making cranberry bread lately, but this seems a bit healthier :-)
