Cranberry Oat Bread Bliss

I love bread - anyone who has been reading my blog for a while knows that for a fact.  I commented on someone's blog the other day and said, "I think that if I could eat bread and butter for every meal, I would be a happy girl.  Fat, but happy."  (Check out Bakeaholic Mama's amazingly beautiful bread here.)  With our slushy weather and a 2 hour school delay, what better time to enjoy a lazy weekday breakfast with some warm bread.   This one is a little heavier with the added oats which "sticks" with you throughout the day. 
Cranberry Oat Bread 
  • 1 cup water (70 degrees to 80 degrees)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 cup quick cooking oats
  • 2 1/2 cups all-purpose flour (we use King Arthur)
  • 3/4 cup honey
  • 1/3 cup oil
  • 2 eggs
  • 1/2 cup milk
  • 2 cups fresh or frozen cranberries
  1. Preheat oven to 350 degrees F (175 degrees C). Grease two 8x4 inch loaf pans.
  2. In a medium bowl, stir together flour, baking powder, baking soda, salt, cinnamon, and oats.
  3. In a large bowl, mix together honey, vegetable oil, eggs, and milk. Mix in flour mixture until just moistened. Stir in cranberries. Divide batter into prepared pans equally.
  4. Cook for 40 to 45 minutes, or until a tester inserted in the center of the loaves comes out clean.

  3. We must be kindred spirits because I feel the same way about bread! I swear there is nothing better than bread fresh out of the oven smothered in butter. Pure bliss!
