Molasses Pumpkin Bread

After an epic fail with my pumpkin bread....forgot to add baking soda (oops!)  I had to redeem myself.  Moist, super easy and perfect.  We enjoyed this warm over the weekend.  Nothing says Fall like a warm piece of pumpkin bread!  Great to snack on or enjoy for breakfast!  I love that this one incorporates molasses which gives it a rich color and delicious flavor!

Here's what you'll need - 
1 cup pumpkin
1/2 cup oil (canola or olive), plus extra for the pan
3/4 cup sugar
1/2 cup molasses
1 teaspoon vanilla
2 cups flour
1 1/2 teaspoons baking powder
3/4 teaspoon kosher salt
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon ginger

Heat oven to 350F, oil your 9 by 5 inch loaf pan
In a large bowl, combine pumpkin, oil, sugar, molasses, vanilla.  In a separate bowl, combine flour, baking powder, baking soda, salt, cinnamon  nutmeg and ginger.  Slowly stir the flour mixture into the pumpkin mixture
Pour into the pan, bake for 60 minutes.  Transfer pan to wire rack for 10 minutes. 
Serve warm and enjoy!
