Homemade Larabars

First, let me put a giant disclaimer on this post that these homeade Larabars are seriously addictive.  I'm starting to consider it a smarter move for me to buy them at their $2 a bar pricetag just to ensure they aren't hanging around my house.  I have a wee bit of a problem with porition control when it comes to these sweet, nutty bars.  Simple and delicious, my older daughter has been requesting them as her school snack every. single day. Luckily, we aren't in a nut free class this year so she has been enjoying them!  Her sister requests them for her afternoon snack.  

Homeade Larabar Recipe 
  • 1 cup dates, pitted
  • 1 cup all natural, raw almonds
  • Handful of apricots and cranberries (if desired)
  • 3-4 tablespoons water
  1. Combine dates, almonds and water in a food processor and puree until mixture starts to stick together. Add apricots and cranberries if desired.  Add a little more water if necessary to help mixture come together.
  2. Pick up date mixture and using your hands work to squeeze it together into one big clump. Mash it down on a cutting board or sheet of wax paper to form into one even rectangle shape using the sides of your hands to make the edges straight.
  3. Slice into 12 even squares. For best results store in the fridge, although bars can be kept at room temperature.

  1. This looks a whole lot healthier than what I posted today :-) My kids love the larabars, and they are super expensive. Unfortunately, I don't have a food processor, so I am trying to figure out what I can do to improvise...or if I need to convince the hubs that I need a food processor :-)

    1. These are full of yummy goodness! I'm are you could use a blender, if you have a chop setting? Maybe not! Then again, you do have Amazon Prime!!!

  2. Yummy! Here lately my favorite snack has been dates with almonds, so this is perfect for me! It would be so much more handy to have them in a bar form. Easier to eat, too. But I predict I would eat the whole batch far too quickly! Haha.
