My Giddy Cookies

I adapted and named these "Giddy Cookies" because seriously, who doesn't love a cookie that's also good for you?  Since I make the kid's snacks weekly, I'm always looking to mix it up a bit but when I find something that meets my "requirements" we tend to repeat our favorite recipes.  Here's the scoop...

-Healthy
-Satisfying
-All natural
-Economical
-Vegan
-Kid Friendly
-Adaptable
How could you go wrong?  Well, if you aren't a banana fan than these won't be a hit for you but otherwise, we have enjoyed them and recommend them!

Ingredients - 
2 Ripe Bananas
1 Cup Quick Oats
1/4 cup of semi sweet or dark chocolate chips (we've swapped the chips for walnuts, almonds, a handful of dried fruit, shredded coconut or a tablespoon of peanut butter.  The combos are yummy and these make a really fun recipe for you kids to take charge of!  

Preheat oven to 350 degrees
Combine your mashed bananas and oats in a bowl (Sydney loves to squish the whole banana and then they are already mashed when I peel them - anyway to include kiddos in the process!)
Fold in your add-ins
Place a tablespoon sized scoops on your cookie sheet
Bake for 15 minutes and enjoy!  These taste best warm and fresh!  They also will keep for 3-4 days, covered.  If they last that long!
