I love me a good LIGHT GREEK burger!

It seems like when the weather starts to feel more like Summer, I crave grilled items.  I love a good veggie burger and the other day I decided to mix up some flavors to make a light Greek inspired veggie burger.  It was full of flavor and deliciously healthy!  Easy too!
Ingredients:
For Burger
Handful of fresh parsely
2 tablespoons of feta cheese
3 slices of cucumver
1 tablespoon black olives
2 slices of tomatoes
Multigrain English Muffin
For Roasted Red Pepper Sauce
1 tablespoon olive oil
2 tablespoons red onion
1 roasted red pepper, seeded and chopped
1 container of nonfat plain Greek yogurt
salt and pepper, to taste

Directions:
Use your favorite veggie burger as the base in this creation. Grill and place on a toasted English Muffin. I use the muligrain English Muffin for the added health benefit and they are lower in calories and carbs than your regular hamburger bun.  Top burger with feta, tomatoes, cukes, olives and parsely. 

In seperate bowl, prepare your red pepper sauce by combining 1 tablespoon olive oil, 2 tablespoons red onion, 1 seeded roasted red pepper,  1 5 oz container plain greek yogurt (love Chobani!), salt and pepper. Blend all ingredients until smooth and use as a dressing on your burger.

  6. Oooh, yummy! I never would have thought to put the burger on an English muffin, but it sounds delicious. I love Greek flavors so this would be good!
