Fresh Eats!

When the Summer heat really starts to kick in, I am typically OVER cooking and preparing and just forget about baking!  I can't even utter that those words!  It's days like these that I prepare food all at once and store it in the fridge and simply hope for the best.  It's just TOO HOT to think about anything else - unless we are dining out, in which case, I'm game!  Until then, we feast on this and that and do "snack lunches" full of hummus, veggies and fruit.  Here are a few dishes we've enjoyed recently:
 
Fresh Spring greens with olive oil and vinegar.  Simple, healthy and fresh from the farmstand!
I shamlessly stole this recipe for Caprese Quesidilla from Wine and Glue here.  Easy, yummy, enough said!  Oh and her pics are much better than mine and her blog rocks so check it out!
Riley has also been "in charge" of salads all week long.  Last night she made a chunky bunch of veggies, dressed perfectly, sans lettuce!  I loved the big chunks of red onion in here, that's my girl!  I also noticed that the kids tend to enjoy the salads (or anything for that matter) much more if one of them have created it!  This was no exception!
What have you been doing in the kitchen?  Do you have certain meals you make over and over again when the weather gets steamy?

BTW - It's JULY 31st!  Yikes!  How did that happen?

  1. I just posted a Watermelon and Avocado Salad that is perfect for really hot days. You can keep it in the fridge for a few hours before you want to eat it. We have mild winters, so a salad is always on our table.

    I agree with you about getting kids involved in the preparation of meals. I got my kids to start eating things like capsicums (bell peppers), onions, mild chillies, olives, herbs, tomatoes when they were really little by getting them to top their own homemade pizzas, they've never looked back.

  3. YUMM!! Looks like some good summer eating! I totally hear you on being over cooking & baking....although I have been forcing myself to get back in the swing of things :) I LOVE that Riley is making salads....if I trusted my little Greta a little more with a knife, she'd be all over that!!
