Lemon Potato Salad (Grab and Go!)

I love a yummy potato salad, it just screams Summer!  I don't always want to bring along traditional potato salad to the beach or on a picnic because I worry about the mayo.  I decided to try out this deliciously fresh Lemon Potato Salad that was a hit all around!  Thank you, Healthy Appetities for a great idea!
 
Potato Salad
  • 1 green bell pepper, diced
  • 1 cup chopped onion
  • 1/4 cup finely chopped fresh cilantro
  • 1/4 cup finely chopped fresh basil
  • 1/4 cup finely chopped fresh mint
  • 2 1/4 pounds small red-skinned potatoes, unpeeled
Directions
Boil potatoes and drain
Roughly chop the herbs of your choice (I use the ones above), onion, salt and pepper.  Store in container and combine with viniagrette or pour over and toss prior to serving.
 
Vinaigrette


  • 1/4 cup fresh squeezed organic lemon juice.
  • 1/3 olive oil
  • 1 tablespoon Dijon mustard
  • 1 tablespoon sugar
  • 1 teaspoon salt
Whisk all the ingredients together.  If bringing this salad to an the park or beach,  make the vinaigrette and store in a mason jar.   Shake jar and pour onto salad right before serving!
