Peanut Butter Chia Cookies

 
We try to eat healthy around here and that includes not buying preservative filled snacks. My goal is to eat fresh, real food when we can so ours snacks include a lot of fresh vegetables and fruit.  These Peanut Butter Chia Seed Cookies are ones that you can feel good about sharing and serving. Ingredients:
  • 3/4 cup flour
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1/2 cup peanut butter
  • 1/2 cup honey or agave
  • 2 tablespoons dark chocolate chips
  • 1 – 2 tablespoon chia seeds
  • 1 egg
  • 1/4 teaspoon salt
Directions:
  1. Preheat oven to 350 degrees.
  2. Place honey (or agave) in a bowl or a standing mixer and beat for 1 minute.
  3. Add the egg, vanilla and peanut butter and beat another minute on medium speed or until smooth.
  4. In a separate bowl, combine all the dry ingredients (set aside 1 tablespoon of the chocolate chips to top your cookies with) and mix.
  5. Slowly add the dry ingredients to the wet
  6. Drop the cookie dough onto a cookie sheet sprayed with cooking spray
  7. Flatten down each ball of cookie dough with the back of your hand
  8. Place one chocolate chip in center – I notice my kids get even more excited if they know there is a chocolate chip involved!
  9. Bake for 10-12 minutes
  10. Cool, serve and enjoy!

  2. Ooooh, yummy! They look so cute too with the seeds and the chocolate chip. I love anything with peanut butter in it, so these cookies sound so delicious! And chia seeds are a favorite of mine as well :)

  4. I have not yet tried Chia Seeds either! What am I waiting for? Well, with your recipe, I have no excuse to not try them. Definitely looking for them the next time I go shopping.
