Spinach Ziti Soup

 
This delightful, healthy soup is the perfect one to slurp up on a chilly Fall day.  This past Summer, my friend shared one of her favorite soup recipes with me.  It sounded simple and yummy, I knew I'd be making itas soon as the seasons changed.  This past weekend, I finally tried it out!  Tasty and hearty, our entire family enjoyed it!  It will become a favorite in the months to come!
 
Spinach Ziti Soup
Ingredients:
  • 3 Tbls olive oil
  • 1 small onion, chopped
  • 1 tbl garlic, chopped
  • 1- 10 oz pkg fresh spinach, chopped (stems removed) or frozen chopped spinach
  • 1 tsp dill
  • 1 tsp parsley
  • 1 tsp italian seasoning
  • 2- 28 oz cans crushed tomatoes, pureed
  • 4-6 cups vegetable or chicken stock
  • 1/2 lb ziti
Directions:
  1. Sauté onion, garlic and spinach in oil until done.
  2. Add stock, tomatoes, and herbs. Simmer.
  3. Cook ziti separately. Drain
  4. I would suggest that you leave the pasta out even for leftovers, so it doesn't absorb the liquid.
  5. Top with parmesan cheese, crushed red pepper and serve with a slice - or a hunk of crusty bread!
