Quick and Easy Quiche on the Fly

This being a Mom AND working outside the home is for the birds!  It's hard to keep it all together.  A few days ago I got home and realized I had planned NOTHING for dinner (bad Mama!  BAD!)  So, I decided to whip up a quiche - which sounds fancy when you've got NOTHING in the house but some eggs, a bag of frozen brocoli and not too much else.  I didn't have flour either - so I adapted a bit and decided to use whole wheat tortillas as the crust.  The result was just delicious and a little lighter.  I didn't hear any complaint!  Win, win, WIN!
Quick and Easy Quiche
Ingredients
  • 6 large eggs
  • 1 package of frozen organic broccoli
  • 1/8 teaspoon nutmeg
  • 3/4 cup cheddar cheese (optional)
  • 1 cup milk (almond or regular)
  • 5 whole wheat tortillas
  • salt and pepper
Directions
  1. Preheat oven to 350 degrees
  2. In large bowl, combine whisked eggs, milk, nutmeg, cheesesalt and pepper.  Add broccoli and set aside.
  3. In deep dish pie plate, lightly coat dish with nonstick cooking spray. 
  4. Lay  large tortilla in the middle.  Cut remaining four tortillas in half and arrange around the pie plate until mostly covered.
  5. Pour egg/broccoli mixture inside
  6. Cook in 350 degree oven for 50-55 minutes or until center is set.
  7. Serve with salad and enjoy!

  3. I agree with Tammy... great idea for the crust! Amazingly, I have never made a quiche. And, I have never even eaten one. I am embarrassed now, and have to remedy this. Have a great weekend :)

  4. Way to improvise! We often use eggs as our fallback when we have nothing for dinner....which is more often than I'd like to admit - lol :) Have a great weekend....hope it's relaxing!!
