Lemon Rosemary Bread

I am a born and raised New England girl.  I'm used to the seasons, lots of snow, cold Winters, "hunkering down", you get the picture.  There is something to be said for these shorter Winter days and cozy evenings.  Less time outside, more family time, cuddles and COMFORT FOOD!  There is little I like more than a cozy Saturday evening, spent with my loves, enjoying a wonderful bowl of soup and delicious bread.  It's actually ALL ABOUT THE BREAD if I'm being honest - oh and the butter!  Yes, could I have an order of bread and butter with a side of soup?
Growing up, my Mom always made a delicious comfort food recipe on cold Winter evenings.  I remember when she bought our very first bread machine, it was an amazing appliance!  This machine could actually make bread for us and then we could devour a delicious loaf of hot bread?  Genius! So, when my Mom said she no longer needed and gave it to me, how could I resist?  It's huge, it's old but yes, it makes one delicious loaf of bread!
Last week Riley and I decided that a loaf of Lemon Rosemary Bread would be delightful.  Never having made it in our bread machine before, we weren't sure how it would turn out but it did not disappoint!  Fluffy, easy and delicious.  This bread is perfect served warm with a bit of butter.

Easy Lemon Rosemary Bread Machine Bread!
1 cup warm water
2 and 1/2 teaspoons active dry yeast
2 teaspoons white sugar
1 & 1/2 teaspoons salt
3 tablespoons olive oil
3 teaspoons crushed dried rosemary
3 teaspoons lemon juice
3 cups all purpose flour
Directions:
Pour the water into the pan of a bread machine, then sprinkle in the yeast and sugar. Let the mixture sit in the bread machine until a creamy foam forms on top of the water, about 10 minutes. Sprinkle in the salt, then add olive oil, rosemary, lemon juice and flour. Set the machine for light crust setting, and start the machine.  4 hours later you will have a delicious loaf of bread!
Enjoy!
