SnowDay = SoupDay

We've definitely been slammed with snow in the past couple of weeks here in New England. I know I've talked about it before but it's crazy to think that we had almost no snow on the ground before the last week of January and now we have easily 3 feet in some places. I don't mind the snow specifically but I certainly don't enjoy driving in it when the roads are sloppy. To make matters worse, it's been bitterly cold in this area so it's not exactly great weather to go sledding or snowshoeing in. My girls are braver than I am, and giggled for over two hours while they flooded last Saturday in 15° weather. I didn't last long, but they certainly had a good time. It's always amazing to me how resilient children can be when they're enjoying themselves.  Luckily, the girls are finally at an age where I can let them play outside in our backyard which is fenced in, and easily watch them from my kitchen window while I'm kicking back to enjoy coffee or make dinner.  All this snow has made it ideal for soup making and we've been enjoying it on a weekly basis!  This easy veggie soup is one of the girls favorites and literally is as easy as dumping whatever extra veggies you have on hand, fresh or frozen, with some broth and the seasoning of your choice.  I love the addition of potatoes because they are filling and rather comforting in my opinion.
Kitchen Sink Vegetable Soup (Inspired by this one)
  • Two potatoes, peeled and diced
  • 2 cups of fresh or frozen veggies
  • 6 cups of vegetable or chicken broth
  • Two cloves of garlic peeled and minced
  • One onion, peeled and diced
  • Salt-and-pepper to taste
  • A couple pinches of thyme and oregano

Throw all these ingredients and your crockpot, cook on low for the day and said with a nice load loaf of crusty bread and you're good to go!

  2. I'm sure the snow gets old, but I am a little jealous. We hadn't had very much snow this year in Ohio. And YES to the kids playing outside in a fenced in yard while you stay warm in cuddle. I am hoping that a fenced in yard is in my future :)
