If you've read my blog for a while, you know we have a definite love of fresh berries around here!  Blueberries especially!  We LOVE the Summer when we can get the freshest berries around locally.  We lived in coastal Maine for about ten years, we loved August when wild blueberries were plentiful. Unfortunately, living in New England, there are only a couple months when wild blueberries are available.  That's why we freeze and buy frozen throughout the year.  We especially love fresh frozen WILD BLUEBERRIES!  So sweet and delicious, they are perfect for desserts, muffins, waffles, pancakes, anything you love your blueberries in!

Just the facts:
1.  Wild Blueberries are wildly different from the regular blueberries you normally find in the produce section.  Don’t be fooled by their size, they pack more into their tiny blue bodies than any other blueberry on the planet! 
2.  Wild Blueberries have a more intense flavor than regular blueberries. Wild Blueberry plants are more genetically diverse with thousands of interlocking plants spreading and interlocking naturally across fields over thousands of years. That diversity is what gives Wild Blueberries their complex and delicious flavor—an extraordinary mix of tart and sweet. 
3.  Wild Blueberries have two times the antioxidant capacity of the larger cultivated blueberries. A growing body of research shows the potential health benefits of Wild Blueberries including gut health, diabetes, cancer, and brain health.

This year, Wild Blueberries is sponsoring their "Show us your Wild Blueberry Side" recipe contest!  The challenge is to create a unique recipe featuring Wild Blueberries.  Think outside the box - these blueberries are deliciously unique and great for lunch ideas, salads, appetizers and pizzas.  I decided to use mine to make a delicious light and health(ier) dessert, Wild Blueberry Crumble...

Wild Blueberry Crumble
Ingredients
  • 3 cups of Frozen Wild Blueberries
  • 2 tablespoons maple syrup
  • 1 tablespoon corn starch
  • 1 teaspoon vanilla
  • 1 cup oat flour
  • 1 cup old fashion oatmeal
  • 1/3 cup natural sugar
  • 1/4 cup coconut oil
  • 1/2 cup apple sauce
  • 1 teaspoon baking powder
  • 1 tablespoons freshly squeezed lemon juice
Directions
  1. Preheat the oven to 375 degrees. Line an 8 inch square pan with parchment paper.
  2. In a bowl, stir together the maple syrup, corn starch, vanilla and lemon juice. Gently mix in the blueberries. Sit aside.
  3. In a medium bowl, stir together oatmeal, oat flour, coconut sugar, baking powder and salt. Add in apple sauce, stir. Then stir in coconut oil. Dough will be crumbly. Separate dough in half and press one half into the bottom of the prepared pan.
  4. Pour the blueberry mixture evenly over the crust.
  5. Stir the remainder of the crumble over the berry mixture
  6. Bake in preheated oven for 40 minutes, or until top crumbled pieces are slightly brown. Cool for about 20 minutes and serve.

  1. We love Wyman's blueberries - and I buy them in bulk at Sam's club :-) We use them in green smoothies, fruit smoothies, in oatmeal, and the ever popular blueberry pie - yum!

    I will have to check out Sam's Club for the Wyman's brand. They look great. Thank you for the recipe. As always it sounds and looks wonderful.

  4. I absolutely have to look for these! I am trying to have oatmeal for breakfast more often, and I love tossing Blueberries on top, Wild Blueberries will be even better!
