Long Weekend Recap

I'll be the first to admit I'm a little behind my game this week. We enjoyed a glorious Memorial Day weekend, the sun was shining and the air was warm! The girls had the Friday before Memorial Day off so we had four days altogether. Among the exciting events of the weekend, we played mini-golf, grabbed dinner at our favorite local diner, planted the garden, had a visit from the tooth fairy, spent a lot of time outside and got our fair share of grilling on!  The first day back to school has greeted us with mid summer temperatures in the 90s! Needless to say, everyone seems to move a little slower in this type of heat.

I wanted to share some of the delicious salads we had this past weekend, I'm sure many of you had similar ones but these are some of my absolute favorite and definitely worth repeating. Lucky for us, Fourth of July is right around the corner and I will definitely be making some of these again!

Tried-and-true, I'm always a huge fan of this Chipotle coleslaw! My dear friend introduced it to me years ago and although I can never duplicate her recipe, this comes pretty close!

This Mediterranean Salad is also a favorite, flavored with artichokes and lemon, it's light and refreshing!

This quinoa salad has a delicious Summer flavor, you can find the recipe over at Townsend House, yummy!
On that note, I'm getting hungry! I'm happy salad days are upon us, we are most certainly ready to enjoy the delicious flavors of Spring and Summer!
