I don't know about you, but this is the time of year when my life seems to become busier. Its starts gaining momentum with Halloween, the days and weeks fly by.  By the time mid November rolls around, I'm in the thick of it.  I mean, Thanksgiving is next week! There's all sorts of things to do in the coming days including decorating, planning, shopping and preparing.  Oh yes, cooking and baking too!  It's time to get serious people!
I was in Walmart the other day in an effort to get everything done all at once and came upon Walmart's Bake Center. It was stocked with all sorts of items to make the holidays easier for me. I was also glad to see their prices were less than where I usually shop.  They literally had everything I need to make my holiday recipes budget friendly and easy. The Walmart Bake Center also featured recipes and ideas to make the holidays as delicious as they should be. I decided to test out a recipe after I was inspired by the Baker's products.  This one was surprisingly easy and economical too! Angel White Coconut Fudge is creamy, delicious and reminds me of freshly fallen snow!
Angel White Coconut Fudge
Ingredients
  • 3/4 cup butter, softened
  • 3 cups sugar
  • 1 jar Jet Puffed Marshmallow creme
  • 1 can (5 ounces) evaporated milk
  • 12 ounces Bakers white chocolate
  • 1 teaspoon vanilla
  • 1/2 cup Bakers Angel Flake Coconut
Directions
  1. Line a 9x9 inch pan with foil, grease with 1 teaspoon butter, set aside
  2. Mix sugar, butter and evaporated milk in large saucepan over medium heat, stirring to dissolve sugar.
  3. Bring mixture to a full boil for 5 minutes, stirring
  4. Remove from heat, stir in chocolate and 1/2 of the coconut until combined
  5. Beat in marshmallow and vanilla extract
  6. Pour into the prepared pan. Sprinkle with remaining coconut. Cool completely on a wire rack
  7. Using foil, lift fudge out of your pan and discard foil. Cut fudge into 1 inch squares, store in airtight container
This fudge is perfect for a coconut lover or someone who appreciates unique, delicious treat.  It's very rich, a little goes a long way!

  3. I love coconut and this fudge looks delicious. I love the walmart holiday baking section. They always have the cool seasonal cake mixes and frostings. But you have to shop it early in the season. I scored some holiday mini m&ms that I'm pretty sure are already sold out at my local walmart.
