Lentil Sloppy Joes (Easy Recipes!)

My daughter has been spending more time in the kitchen lately. She's definitely enjoying creating and cooking! Over the weekend, she wanted to make something different and took a look through her favorite cookbooks. She opted to make Lentil Sloppy Joe's. 
Lentil Sloppy Joes
Ingredients

  • 2 tablespoons olive oil
  • 1 yellow onion, chopped
  • 1 poblano pepper, chopped
  • 1/2 teaspoon oregano
  • 1 cup lentils, rinsed
  • 3/4 cup ketchup we use Sir Kensingtons  
  • 1 3/4/cups water
  • 1/4 cup red wine vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon brown sugar
  • salt to taste
  • freshly ground black pepper
Instructions
  1. Heat oil in frying pan over medium-high heat. Saute onion, pepper, and oregano until onion is translucent and pepper is soft, about 6 minutes.
  2. Deglaze with red wine vinegar. Add ketchup, water, vinegar, Worcestershire sauce, brown sugar, salt, and pepper. Add lentils and mix well.
  3. Bring to a boil, then reduce heat, and cover. Continue cooking for about 30 minutes, stirring regularly.
  4. Cook until lentils are soft but still hold their shape. Be careful to not overcook.  
These were flavorful, hearty and delicious. So good that I had to share!  Plus, I had a night off from cooking which is always a win!

  2. I need more lentil recipes in my life. I'm usually hopeless with them (except in our holiday lentil loaf). These sound so delicious! Isn't it great when the kids start cooking? I love that she picked such a healthy meal too!

  4. I bet this would be delicious in a wrap also! Question for you and your daughter, since I am new to lentils... Would the orange lentils I have on hand work ok?
