Welcome February and Flatbread Recipe

Happy February 1st! It makes me extra happy when the beginning of a new month lands on a Monday, am I the only one? It seems to help motivate me or stay motivated, especially when I'm trying to tackle new challenges! This is the time of year when so many of us are trying to do better, whether it's eating a little better, exercising more, staying focused on the budget, whatever it is, it's always nice to reflect on the first month of the new year and start fresh again. So how did it go for you? 

I'm definitely more focused on eating better in the beginning of a new year. After all the holiday indulging, it just feels good. I don't go crazy with a "diet" but I do try to follow the 80/20 rule which basically says that 80% of the time you follow a healthy, whole foods diet and 20% of the time you can realistically eat what you want. It allows me the freedom I need, especially on the weekends when we like to enjoy a meal out or enjoy special snacks on Super Bowl Sunday, for example. I follow this rule for years and in general, been happy with the results. Are usually summarize it is healthy eating, not dieting. When we use the word dieting I think it can set us up for failure. 

One of my easy, go to meals a regular basis is the simple flatbread. It's healthy, easy and makes me feel like I'm enjoying something "bad" even though it's healthy and good. My friend shared it with me years ago and I've been enjoying it lately so I figured I'd share it.

Ingredients

  • One tortilla or healthy flatbread of your choice, I use Ezekiel 4:9 Sprouted Wheat Tortillas
  • 1/2 cup of broccoli, chopped
  • 1 small tomato, chopped
  • 1/4 onion, chopped 
  • 1/4 teaspoon garlic 
  • Cheese of your choice, I usually use feta because a little goes a long way!
  • 1 tablespoon plain greek yogurt or sour cream 
  • salsa 

Directions

  1. Heat oven to 350 degrees
  2. Combine all your veggies in a bowl 
  3. Spread on your tortilla
  4. Top with cheese
  5. Serve with Salsa, Yogurt, Sour Cream or Guacamole

Easy and delicious!  On a side note, it's going to be 55 degrees again here today. We actually pulled out the sidewalk chalk yesterday.  Unheard Of!

  1. It's going to be even warmer on Wednesday (but rainy). Maybe it will wash all the snow away!? My January wasn't very good (as you know) but I'm happy we've turned a page on the calendar and I'm hoping for a better rest of the year.

    1. It just helps keep me motivated! So much harder to focus on clean eating for me on a Friday night! Monday's are like a fresh start! :)

  4. I did not know that Ezekial also made tortilla's, I will have to watch my bigger stores for those. There bread is the only bread I eat when I am following my plan, and I love it so I know I would love the tortilla's. I like your flatbread recipe, and will have to try it.

    I am with you on the Monday thing! It's because of work issue's, but the month is always just "cleaner" for me when we start out on a Monday :)
