Barefoot by the Sea: Summer!

The day is finally here! Very first day of summer vacation! We had a great year, lots of learning and great teachers. It was challenging at times but I definitely feel very fortunate to be part of such a great community that rallies around our kids. That being said we are more than ready to be done with school, I can't tell you how ecstatic I am to not have to make lunches every morning! Today was our first day and although there was no sleeping in, there was definitely a happy calm over our morning. Do you remember that feeling? The feeling of being a kid and having the whole summer in front of you? It's pretty amazing! 
One last minute celebratory street I brought in to school yesterday where these cute cone muffins. These were easier to execute than I thought and I simply baked my favorite muffin recipe to lower the sugar content a bit. There are tons of recipes and instructions out there but you pretty much just put ice cream cones in a muffin tin, use an ice cream scoop to get the batter in your cones evenly and bake at 350° for 20 minutes. These were a huge hit at school! The kids were absolutely giddy with the thought of eating a cupcake cone! What better way to welcome summer and celebrate one last time with school year friends!

  2. The beginning of Summer Vacation was always the greatest feeling - sleeping in and staying up late and doing whatever whenever and going outside and sunshine and ahhh, it was fabulous xD
    Also, cupcake cones are now on my list of things to try - they look awesome!

    I LOVE the cupcake cones! I want to bake them, but I need to come up with an occasion first! I should have made them before my nephew went back to Canada. Guess, I'll have to find another reason :)
