Summer Happenings

Time to clear the camera! Here's a recap of what we've been loving lately! It's been a great Summer so far, so happy that we're squeezing the juice (so to speak) out of the rest of it! 

Garden Fresh Salads! 
Our garden has been thriving in the heat and humidity!  TONS of beans, we grew yellow, green and purple this year, fresh tomatoes, lettuce, cucumbers and herbs. We've enjoyed tons of dinner salads!  Our peppers are starting to go crazy now too, and eggplant is healthy and doing great! Some of my favorite salads:

Staycation Trips!
We are loving exploring our area! We took the girls to the Drive In last weekend, old school and super fun! They loved the old intermission ads the most!  It was a fun, late night, Summer treat!

 Fruit Infused Water
Loving all the combos, it helps me drink more water and stay hydrated in these hot days! I also love Fruit Infused Iced Tea this time of year! 

 Coffee Cubes!
I used to make these all the time last Summer! When you have leftover coffee, simply freeze and use in your iced coffee!  It won't water it down and will keep you chillin' while you're enjoying your java! I also still love enjoying my coffee treats from home! Here's my recipe for Iced Tiramisu Coffee!  

Homemade NICE cream!
Lots of this around here these days! Pureed bananas, a little cocoa or carob powder plus a tablespoon of almond or peanut butter? Blissfully delicious! Get a basic recipe for it here, which I posted back in 2011! It's safe to say we've been enjoying it for years!

Getting back to it! August 8th and with only weeks left of Summer, I'm heading out to enjoy it! Have a great day!

  1. Hey looks like we've been doing a lot of the same things this summer! I tried salad in a jar and I loved it! I also made dark chocolate nice cream. So jealous that you got to go to a drive in!! We don't have any around here. We just got back from a hotel stay and they had fruit infused water out all day/every day. They switched it up and we really loved them all. I need to do that more at home. Your garden bounty sounds amazing! My herbs came back like crazy so I'm thinking margarita pizza tomorrow. We have a few veggie plants in the garden but got them in late so we'll see. I never have leftover coffee for cubes (with 4 of us drinking it in the house!!).

    1. The hotel we stayed at in June did the same thing! They had the best combos - blueberry orange, cherry pineapple, it was so good!

  2. I need to make some coffee cubes! Love that idea!
    We just picked our first eggplant. It's an experiment for us to see if we can learn to love it. Any suggestion on a recipe for us to try being new to the veggie?

    1. Congrats on that first home grown eggplant! I'd keep it simple and make a classic eggplant parm!

  3. I just heard of that ice-cream recipe yesterday and I've been wanting to try it! I am trying to cut out most refined sugar so that would be perfect. I love the coffee cube idea too! Brilliant.
