Blueberry Banana Quick Bread (Easy Recipes)

Can I just say it was 46 degrees when I dropped my oldest off at school this morning? It felt cold and it felt like Fall! Since apple and pumpkin season seems to be upon us, I wanted to make one last blueberry bread! This one combines delicious blueberries and bananas and is quick and easy (my type of snack!) 
Ingredients 
  • 1 cup oat flour
  • 1/4 cup sugar
  • 1 cup bananas (2-3 mashed)
  • 1 egg
  • 1 teaspoon baking powder 
  • 1/2 teaspoon baking powder
  • 1 teaspoon of vanilla extract
  • 1/2 cup of blueberries
Directions 
  1. Preheat oven to 350 degrees
  2. Combine dry ingredients (flour, baking powder/soda and sugar)
  3. In separate bowl, combine wet ingredients (bananas, egg, vanilla extract) 
  4. Slowly add wet ingredients to dry until mixed thoroughly 
  5. Fold in blueberries 
  6. Spray pan with nonstick spray 
  7. Pour batter in
  8. Bake for 30-35 minutes

We love this moist and flavorful bread for snacks. The combo of blueberry banana is so good! Takes me back to early August when we all went blueberry picking!

  2. Oh this sounds amazing! I love banana bread, but have never added anything along with it before!
    It's been quite chilly in the mornings here as well, but not yet below 50 by the time I'm up...though it has been in the 80's during the day! It feels like Autumn in the morning, and Summer during the days. I'm not looking forward to Winter, if this is any sign, ha!
