Buffalo Chickpea Wraps (Easy Recipe)

We're getting back into the school routine and for me, a big part of that routine includes making lunches. Can I get a collective sigh here? I can't tell you how over I was trying to keep variety in their lunchboxes by June. Gone are the days of slapping together a PB & J and throwing an apple in a brown paper bag. Check any social media feed and it's full of delicious homemade bento boxes, yummy sandwiches and everything in between. So, being refreshed from a great Summer of easy snack lunches and "grab and go" items, I'm here to share a delicious option we recently discovered and that my kids are loving! 
Buffalo Chickpea Wraps 

  • 1 can chickpeas
  • 1 tbsp mayo 
  • 1/4 cup buffalo hot sauce
  • 2 celery stalks, chopped
  • 1 tsp crushed red pepper, to taste
  • salt and pepper
  • romaine lettuce
  • your favorite wrap (I used Trader Joes Habanaro Lime tortillas)

Directions

  1. Mash chickpeas with a fork or in food processor, add mayo, hot sauce, crushed red pepper, salt and pepper and combine until chickpeas are mashed.
  2. Toss in celery
  3. On your wrap place a couple leaves of romaine and top with 2 heaping tablespoons of your chickpea spread
*This recipe makes 3-4 wraps and can store in an airtight container for 4 days.
It is a tad spicy but you can easily modify this by omitting the crushed red pepper and choosing a different wrap. 
I'm not kidding when I tell you my kids are loving and requesting this wrap for lunch. I'm happy to provide a healthy, fueling sandwich to keep them going throughout the day. Keep in mind, we're only on week 2 here so I'm guessing it will be only a matter of time before their sick of these and ready to move on!

  2. I would love this for my lunch too. :-) You do such a good job!! I am always impressed with your encouragement to your girls to eat healthy. It really helps me stay on task with my boys. Thank You!!! I am so happy that my boys choose to eat healthy. I have seen them decline soda and other junk .... with out me saying anything.

  4. I was so excited when I saw it was chickpeas!! I've made it into a salad with mayo but never thought to add hot sauce. Yum!! PInning this!! Miss HS has been packing pita bread with hummus on the side and all different veggies.
