STRAWBERRY SURPRISE DONUT MUFFINS (Easy Recipes)

The funny thing about having kids, time never stops. There's always somewhere to be, something to do, something to bake, someone to pick up or drop off, you get the picture. I guess that's why it should be no surprise that we've arrived at the very last Friday in October!

We're deep into Fall at this point. Our local farm is abundant with seasonal produce: pumpkins and squash, I'm craving soups, stews and delicious, homemade bread. Naturally that would be EXACTLY when I start these requests from my youngest:

"Mom, can we have a different snack this week besides pumpkin muffins?" 

It's true they're already missing our visits to the farm on warm summer days, which are definitely a memory at this point. So, never one to want to disappoint (ugh - the mommy guilt), I decided to bake one last batch of Strawberry Muffins but not just any strawberry muffins...STRAWBERRY SURPRISE DONUT MUFFINS! Yes, this mama pulled out the "D" word and let me tell you, it resulted in absolute delight! 

STRAWBERRY SURPRISE DONUT MUFFINS

Ingredients

  • 1/2 cup sugar
  • 1/4 cup butter, melted  
  • 1/4 cup strawberry jam
  • 3/4 teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon
  • 1/2 cup almond milk
  • 1 teaspoon baking powder
  • 1 cup all-purpose flour

Directions

  1. Preheat oven to 375 degrees F 
  2. Grease 24 mini-muffin cups.
  3. Mix 1/2 cup sugar, 1/4 cup butter (I used Earth Balance), nutmeg and cinnamon in a large bowl. 
  4. Stir in the milk, then mix in the baking powder and flour until just combined. 
  5. Fill the prepared mini muffin cups about half full.
  6. Make a well in the center of each mini muffin and top with about 1/4 teaspoon of jam and cover with a bit of batter to "hide" jam
  7. Bake in the preheated oven until the tops are lightly golden, 18 to 20 minutes.
To those of you who claim you can't bake a donut well, honestly, would anything, ever replace a freshly made REAL donut? Probably not but these come pretty close. They are moist, delicious and so good! The strawberry filling in the middle is a yummy surprise and there's no doubt I'll be making these again when we're are channeling our summer memories!
