No Bake Tropical PB Cookies (Easy Recipes)

Can we talk for just a minute about Summer vacation? If you're a Mom, you can likely relate to that certain feeling in the air when school gets out, the kids have a sense of freedom and relaxation that you just can't always get during a busy school year. We just got out last Wednesday and it's been blissful so far. We've had some beautiful weather, celebrated my youngest's birthday and just loved the no schedule/no plans, easy, low key days. Of course Summer means they are looking for more to do and since both my kids enjoy spending time in the kitchen, we love this recipe! It's SO easy and requires just a few ingredients. These are the type of cookies I can send my kids into the kitchen to make and not worry! I know there are a zillion peanut butter cookie recipes out there but we really will be coming back to these again this Summer! They're easy to customize too!
Ingredients

Directions
  1. Pour Muesli in large bowl and set aside
  2. In a small bowl, mix peanut butter, maple syrup and vanilla together
  3. Pour peanut butter mixture into the muesli, stir until combined and form into cookies
  4. Place cookies on wax paper and allow to set
  5. Store in airtight container in the refrigerator
We really love the tropical muesli, it's gluten free and has chunks of dried fruits, nuts and seeds which adds more flavor and texture to these cookies. We all loved these - they are worth a try!
