Barefoot by the Sea: SUPERFOOD SUNDAY!

Friday, February 5, 2010

We aren't huge football fans around here but hey, any excuse to make some fun, delicious food is a great reason to celebrate!
So, this Sunday, we are making some festive football food, in honor of the big day!

Slow Cooker Sweet and Spicy Chicken for Tacos (Prudence Pennywise)
Estimated Cost: $3.00
1 lb. boneless, skinless chicken breasts
1 (14 ounce) can petite diced tomatoes, undrained
1/3 cup brown sugar
1/4 to 1/2 teaspoon crushed red pepper flakes
Coat inside of crock pot with no stick cooking spray. Place all ingredients in crock pot. Cook on high for 4-6 hours or on low for 8-10 hours, or until chicken shreds very easily with a fork. Season to taste with salt and pepper. (Chicken will absorb liquid after it is shredded.) Serve in tacos.
Got this great recipe over at a blog I just discovered...Prudence Pennywise.  She makes yummy recipes that are on the cheap..

Mini Football Subs (Family Fun)
  • Meatballs
  • Spaghetti sauce
  • Shredded Cheese
  • Individual-size rolls
  1. To make a batch, first prepare your favorite meatball recipe, shaping each meatball into a mini football before cooking. Once they're cooked, add the meatballs to a skillet of spaghetti sauce and warm them through.
  2. For each sub, cut a V-shaped notch from the top of an individual-size roll, place a meatball in the roll, and top with cheese shred laces. Finally, get the sandwiches in a huddle on a cookie sheet and place them in a warm oven for a few minutes to melt the cheese.
So, who's it gonna be...Saints or Colts?  Enjoy it everybody!

  1. I think I might just have to try those mini meatball subs! They look really good! Of course I will probably have to put a lot more laces on mine :-)

  2. I love those ideas!! I have to make those tacos for me, and the meatballs for my hubby!!

  3. Yummy! The chix taco looks great and I love anything I can do in my crockpot.

  4. I think the little meatballs are cute, but I can see my patience wearing thin on making thoe thread lines with cheese. :)

  5. oh both of those recipes look so yummy and i am so hungry! we aren't huge football fans either but you can always count on us siting in front of the tv on Superbowl Sunday too!

Thanks for stopping by my blog!
