Barefoot by the Sea: Peachy!

Friday, April 23, 2010

Always on the hunt for a yummy dessert that has a healthy flair, I came across this recipe for Broiled Peaches with Hazelnuts and Vanilla Ice-Cream from Cooking Light.  You don't have to serve it over vanilla ice cream (although you may want to), in fact I served it with vanilla yogurt and sliced bananas and the girls loved it.  I also reduced the sugar a bit, and although it was tart, it was still greeted with smiles.  It definitely will be a repeat dessert around here!

  • 1/4 cup hazelnuts
  • 4  cups peeled sliced peaches (about 1 pound)
  • 1/4  cup sugar
  • Cooking spray
  • 2  cups vanilla fat-free ice cream (such as Edy's or Dreyer's)
  • 1  ounce bittersweet chocolate, grated

Preheat oven to 350°.
Place hazelnuts on a baking sheet. Bake at 350° for 15 minutes, stirring once. Turn nuts out onto a towel. Roll up towel; rub off skins. Chop nuts.
Preheat broiler.
Combine hazelnuts, peaches, and sugar in a large bowl, tossing to coat. Arrange peach mixture in a single layer on a broiler pan coated with cooking spray; broil 5 minutes or until lightly browned. Cool.
Spoon 1/3 cup ice cream into each of 6 bowls; top each serving with 1 cup peach mixture and 2 teaspoons grated chocolate.

Enjoy your weekend and don't forget the two giveaways going on for a set of Evie n Lizzie burp cloths and a copy of Jack and the Beanstalk from Barefoot by the Sea.

  1. that sounds so delicious!
you should also try Coconut Sticky Rice with sliced mango:

  2. Oh that looks delicious!! Now, I'm wondering, would a lot of the flavor disappear if I did not put nuts on it? My son is slightly allergic to nuts.
