Feelin' hot hot hot!

We love, I mean love Mexican food!  Full of flavor, I can't think of a better or tastier dish to serve up for friends than Pico de Gallo.  Tomatoes will be in season pretty soon, if they aren't already in your area.  So, head on over to your Farmer's Market and whip up a batch of this tasty treat.  It's so good!
Ingredients
  • 2  medium tomatoes, seeded and diced
  • 1  medium-size ripe avocado, diced
  • 1/4  cup  diced white onion
  • 1  serrano or jalapeño pepper, seeded and finely chopped
  • 2  tablespoons  lime juice
  • 1  tablespoon extra virgin olive oil
  • Salt to taste

Preparation

1. Toss together first 6 ingredients in a medium bowl. Cover and chill 1 hour. Season with salt to taste.

  1. omg, mexican #1 in our house! LOVE any kind of salsa/pico de gallo/dip whatever! Can't wait for my tomatoes to produce! Taste so different with real tomatoes and not those dang green house jobs!
