Holy Zucchini....and a recipe!

It is safe to say we have A LOT of zucchini right now....so much, that I don't exactly know what to do with it all. After our vacation, we ended up with several oversized zucchini. What's a girl to do? Make zucchini bread, of course! First up....a CHOCOLATE ZUCCHINI Bread! I adapted this recipe from Weelicious.
Ingredients:
- 1 cup all purpose flour
- 1 cup whole wheat flour
- 1/3 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup canola oil
- 2 eggs, whisked
- 1 cup applesauce
- 1/2 cup honey
- 2 cups zucchini, finely grated
- Preheat oven to 350° F.
- In a bowl, combine the first 6 dry ingredients.
- In a separate bowl, beat the vanilla, oil, eggs, applesauce and honey until combined.
- Combine the dry ingredients into the wet and then stir in the grated zucchini.
- Pour the batter into two greased loaf pans.
- Bake for 45 minutes or until a toothpick comes out clean.
- Cool for 10 minutes, then remove bread from the pan and cool completely.
- Serve.
Grate it measure out 2 cup increments and put in ziploc baggies for the freezer. It is perfect in the middle of winter for a fresh zucchini bread or for soup :-) This looks amazing by the way!
