31 Days of Holiday: Easy Pumpkin Cupcakes
It seems like we are always on the run these days and often times, we are contributing to an afterschool event, party, fundraiser, classroom snack, etc! Sometimes it gets to be a little much. I'm often stressed for time but still want to take a little extra effort to bake something to bring to these events instead of showing up with a box of munchkins. If you are that mom, no worries…it happens to the best of us (and seriously, what kid doesn't like a donut hole?) Still, it is nice to show up with something that looks like you took a little extra time to create. What I love about these easy cupcakes is that they are super quick and fun, and delicious too! When I brought them to a recent afterschool activity, the kids got so excited when they saw them! I think when you offer kids something a little different, it's more exciting for them! In all reality, who am I kidding? I love the fact that these are superduper easy!
Ingredients
- One box of yellowcake mix
- One can of pumpkin
- 1 tablespoon of cinnamon
- 24 pieces of candy corn
- 24 regular sized marshmallows
Directions
- Preheat oven to 350°
- In a medium-size bowl, combine your cake mix with your cinnamon until mixed well
- Slowly add in your pumpkin
- Stir thoroughly until combined
- Prepare your muffin tins with a festive Halloween liner or nonstick spray
- Add your batter by heaping tablespoon to each of the muffin tins, resulting in 24 total
- Bake in your preheated oven for about 28 minutes or until you toothpick comes out clean
- When you have about two minutes of cooking time left, remove your cupcakes from the oven and top each with a marshmallow
- Carefully place your cupcakes back into the oven for another 2 to 3 minutes or until your marshmallows are "toasting" on the top
- Remove from oven and gently press with the backside of a spoon each marshmallow so that it has more of a frosting appearance
- While cooling, place one candy corn on the top of each cupcake
