Vegan Coconut Chocolate Chip Bars

More Snow = More Baking!  
This is what my oldest girlie whipped up the other day.  Moist, delicious Chocolate Chip Bars worthy of sharing!  She loves getting in the kitchen more these days and she is getting better with each try, it's great to see her getting more independence in this area.  

1 1/2 cups oat flour or all-purpose flour  
1/2 tsp salt
1/4 cup rolled oats
1/2 cup brown sugar  
1 tsp baking powder
1/2 cup chocolate chips
1/2 cup coconut oil  
1/2 cup applesauce  
2 tsp pure vanilla extract  
2 tbsp blackstrap molasses (you can use honey if you prefer)

Preheat the oven to 325 degrees and line the bottom of an 8x8 pan with parchment paper, then set aside. In a mixing bowl, stir together the first 6 ingredients. In a separate bowl, whisk together all liquid ingredients, then pour wet over dry and stir to form a batter. Spoon into the prepared pan. Bake 25 minutes and enjoy!
The trick is to keep them in your won't be easy, trust me!
