Energy bites, protein balls, no matter what you call them, this powerful, energizing snack seems to be everywhere these days. We love them, and I usually roll up a batch every other week or so. They're the perfect little treat and great for lunch boxes or as an afternoon snack. This week we whipped up the classic peanut butter oatmeal chocolate chip and tried a new recipe, lemon coconut chia. Packed with good stuff, these were a little different but still appreciated by my girls!
Lemon Coconut Chia Energy Bites
1 cup oats
1/4 cup lemon juice
1/4 cup coconut oil
2 teaspoons chia seeds
1/4 cup almonds, chopped
2 tablespoons honey
2 teaspoons vanilla extract
1/4 cup unsweetened coconut flakes
Thoroughly mix all ingredients, with the exception of the coconut flakes and roll into balls. Roll balls into coconut and refrigerate.
