Pesto Pizza Rolls

 
I've talked before about Pizza Night around here - it's every Friday night for us.  Still, it's fun to mix it up a bit every once and a while.  That's where these yummy pizza rolls come in!  Inspired by the Weelicious recipe in the new Weelicious Lunches cookbook (pssst...don't forget to enter to win your own copy here), these pizza rolls are delciously healthy and satisfing!

Buy Catherine McCord's new cookbook: Weelicious Lunches to get the original recipe.  Mine is along the same lines but instead I'm using a pesto base....different and delicious, my family gobbled them up.  They also make a yummy lunch the next day!

Ingredients -
4 tablespoons pesto
1-2 cups chopped veggies (I used red pepper, onion and mushrooms)
Whole wheat pizza dough
1 cup of cheese

Directions -
  1. Preheat oven to 325 degrees
  2. On a lightly floured surface, roll your dough into a large rectangle. 
  3. Spread pesto evenly on the dough
  4. Top with your veggies
  5. Sprinkle cheese on top of your veggies
  6. Start to roll your dough into a wrap shape until you have one long piece
  7. Slice into 12 pieces
  8. Transfer your pizza slices onto lightly oiled pizza stone or baking sheet
  9. Cook for 12-15 minutes or until crispy
  10. Allow to cool for 5 minutes and enjoy!

  3. These look so neat! Never thought to try rolls like this. I love pizza so this sounds right up my alley. But heck, who doesn't love pizza? Haha :) Have a great weekend!

  4. What a fun idea! Curious if you ever have any leftovers... How does this reheat? I might try them for "truck" food. It would travel well, and be a healthier option.
