Pesto Pizza Rolls
Buy Catherine McCord's new cookbook: Weelicious Lunches to get the original recipe. Mine is along the same lines but instead I'm using a pesto base....different and delicious, my family gobbled them up. They also make a yummy lunch the next day!
Ingredients -
4 tablespoons pesto
1-2 cups chopped veggies (I used red pepper, onion and mushrooms)
Whole wheat pizza dough
1 cup of cheese
Directions -
- Preheat oven to 325 degrees
- On a lightly floured surface, roll your dough into a large rectangle.
- Spread pesto evenly on the dough
- Top with your veggies
- Sprinkle cheese on top of your veggies
- Start to roll your dough into a wrap shape until you have one long piece
- Slice into 12 pieces
- Transfer your pizza slices onto lightly oiled pizza stone or baking sheet
- Cook for 12-15 minutes or until crispy
- Allow to cool for 5 minutes and enjoy!
