Quick and Easy Strawberry Jam
A couple days ago, I talked about some less than stellar berries from our picking. Luckily, I found a couple of easy recipes that allowed us to enjoy our bounty.
First up, Quick and Easy Strawberry Jam from Whole Living Magazine (one of my favs). We used this on our morning waffles, peanut butter and jelly sandwiches and to top off some simple vanilla ice cream. It only lasts about a week in the fridge but ours lasted about 3 days.
Heat strawberries and sugar in a medium saucepan over medium heat. Cook, stirring, until bubbling and thickened, 10 to 15 minutes. Transfer to a glass jar and let cool completely. Refrigerate for up to one week.
We also made strawberry smoothies with fresh watermelon and leftover watermelon juice from a fruit salad, a splash of Kefir and of course, strawberries. It was delicious and did not disappoint!
