Grilled Cumin Chicken.....healthy and so good!
I've been craving some delicious grilled chicken these days. On New Year's Day, I decided to try the Farm Chicks (yes, I love - love - love their cookbook!) Grilled Cumin Chicken a try.
1/2 cup sour cream (I used light)
1 tablespoon honey
1 teaspoon hot red pepper sauce
1 large clove garlic, minced
1/2 teaspoon ground cumin
1/4 teaspoon salt
2 skinless, boneless chicken breast halves
First, make your marinade - Mix together the sour cream, honey, hot pepper sauce, garlic, cumin and salt in a medium bowl, set aside
Prepare your chicken - Cut the chicken breasts into large bite sized pieces. Add to the bowl with the marinade and toss to combine. Cover and refridgerate for at least 2 hours.
Grill the chicken - Heat an outdoor grill to medium - high. Place a lightly greased mesh grill topper on the grill. Grill the chicken until cooked through - about 4 minutes, turning once. Remove chicken from grill and serve with your favorite dipping sauce.
The Farm Chicks use their apricot dipping sauce but I've used peanut sauce or a lime sauce in the past. Be sure to check out this cookbook - The Farm Chicks in The Kitchen.
